We've filled and sent the DS-260 form as well as all the necessary documents to the NVC. This was done before 6 May 2017. Now my question is how will I know if the NVC is done with its review on my documents and also when to schedule for the visa interview.

Try checking the status of your visa application on the ceac website https://ceac.state.gov/CEACStatTracker/Status.aspx?eQs=o/iS8zDpeAKjMWCuebHqOw==

Does it say AT NVC? or does it say Action Required: Submit requested documents?

If it still says submit requested documents then you can try calling the NVC to get an update. If it says At NVC you most likely have a case complete and will need to call the NVC to confirm.

Thank you SabRob. I just checked my status and it says Action required: Submit requested documents. My worry is, we submitted the documents way before filling the DS 260 form on 6th May, 2017. Do they work on Saturdays? If not I call them on Monday.

Right now it's taking an average of 11 weeks for them to issue Case Complete, so you may have to wait a couple more weeks.

You can check on the site SabRob posted  to check the status. You could also call if you want to sit on hold for a long time.

The NVC schedules interview the last and first week of the months. If you get Case Complete by the end of the month, you'll probably either have a September or October interview.

Oh it doesn't matter in which order you submitted them. If the documents got scanned into their system after the DS-260 was submitted (since it can take a few days, then that's your scan date. You can also call the NVC to confirm your scan date) And no, they only work Mon-Fri.
