I'm Australian, he is American and we have decided to soon start the process for the k1 visa. One thing I'm worried about is he doesn't and hasn't had a job for a year and a half. His dad said he would sponsor me if needed. Will this work? I'm so worried that it won't be approved because of this reason.

We used my father in law as a cosponsor as my husband was maybe a year out of college when we applied and it wasn't a problem, just make sure he's looking for a job where he can support you for those three months you're unable to work (if you have little savings)

Yes many people use a co-sponsor no problem in that as long as he meet the poverty guideline for his household + you.

 

He will do it here to get your K-1 visa but if your fiancé is not working you will need a sponsor again for the AOS process.

 

All this is expensive and you will not be allowed to work for 3-4 months after you are married and send in AOS paperwork so hope you guys have a good savings.

May I ask why he hasn't had a job for over a year?  The answer to this question might help others answer your original question.

125% of poverty level for his household size. (Your household size includes you, your dependents, any relatives living with you, and the immigrants you are sponsoring.)
