File k1 visa before or after going to UK for couple months

I don't think it matters whether you file your petition before you leave or after you return.  Filing before you leave means that you'll be together sooner after your return than if you wait until after you get back to file.  If you file before you leave, in the unlikely event that your application is processed quickly, do you have a plan for responding to any possible RFE?  I would hate to see your application rejected if you received an RFE and didn't even know about it or weren't able to respond to it in a timely fashion.

This sounds like you have everything covered. If you have someone that can inform you of anything that is mailed then I would say do it now also.
