So, I was looking through the paperwork that we'll be putting together here pretty soon, and noticed there's nowhere to really denote the length of your relationship. (Or i could be totally wrong!)

My boyfriend and I met over in June 2013 online, and by January 2014 had decided to give the whole thing a try. I finished off university and got a job on a cruise ship sailing out of Long Beach, so figured that after I finished that contract, I could visit him for the first time! 
The contract lasted from December 2014 to April 2015, where I got to meet him for the first time, and spend a short amount of time together, 13 days. 
Ever since then, we've talked on Skype, either by chat or by voice every single day, and in April 2017, we finally managed to get each other into situations where I could come and visit again, and I've been here for nearly the entire 90 days I have on ESTA (I leave on June 19th, no overstaying!)

There's not really anything in my I-129F packet that shows the length of our relationship. We're most likely going to have hit our 4 year anniversary before I'm in the US for good. Is there anyway I can show this? Should I just attach a piece of paper talking about the things I've above, but in further detail, I guess, and just list it on my cover letter?

You can write a statement to that effect and just make sure it is signed and dated.  The MOST important thing is just that primary evidence that you have been together in person within the last two years, but you can most definitely write a statement for this... thats what my fiance and I both did along with our statements of intent to marry.
