I-864 Affidavit of Support Question - Inconsistent Work History

Been lurking here for quite some time, and thought I can get some input on my situation. I am about ready to start the K-1 Visa process to bring my fiance from the Philippines to the United States. We believe we have most of the necessary requirements, and  a good amount of evidences. My only minor concern is the Affidavit of Support form. I'm a contractor and just got hired on a new project at a company I have worked with off and on for the past 3 years. Being a contractor, I don't necessarily have stable work, but my annual income from my latest tax return  exceeds the poverty guideline, and I will likely exceed it again this year. Based on my situation, do you guys believe my financial support is enough? Does it matter if I am on and off work? And when should I submit the required documents for the Affidavit of Support?

Timeline

If you meet the poverty guideline and can show that for the past three years you should be fine. Just a reminder that for the K-1 process the form is an I-134. The I-864 is used for AOS.
