Since we will be paying by credit card, and the USCIS website says that in order to pay with a credit card, we need to pay at the local office, can we drop off the paperwork there as well, or do I still need to mail it off?

The local office does not handle some of the AOS status like the EAD, AP. That is handle by NBC so you have to send your documents to the NBC, which is the Chicago lockbox address. You can find this out on the USCIS website. There are links to filing out all the paperwork on this forum http://www.visajourney.com/content/examples/

 You can go under the guide tab, see immigration  sample forms. Also make sure you apply for EAD for her, AP incase of traveling.
