Does anyone know how long you have to schedule your appointment once you've been contacted by the Embassy that they ready for you to setup your interview date?  I know the interview date itself could be weeks away.  For example:  We just received notice from the Consulate in Manila that my Fiancé can now schedule her interview.  She is currently working in Saudi Arabia and will return to the Philippines May 22nd.  We received the notice from the Manila Consulate April 27th.  Is this going to be a problem?  Thanks for any advice!  Ken

The I-129F will expire 4 months after approval, as shown on your NOA2. However, the embassy should renew it as long as it is still being worked on. You can also contact them to request to keep it open / renew it. Assuming your VJ timeline is correct, you'll be well within the 4 months from NOA2, so there won't be anything for you to do.
