After marriage and adjustment of status, do I still continue to use my wife's maiden name on the documents or used her new last name as shown on the marriage certificate. Also what is the current wait time for advanced parole.

She puts her married name on her AOS application as to get her GC and EAD/AP in that name...

Lately EAD/AP has been taking longer than normally - around 95-130 days.

you have to legally change her maiden name to her married name in order for you to be able to use it.. Else you will be running into problems.  Those two names will not be seen as the same person and you will have to carry supporting documents to prove your identity.

Don't use two names.

The marriage certificate is the legal name change document. She only needs to supply this together with her green Card  (or EAD/AP when she gets it if they are filing for it) (to update her name with bank-sso etc.). When you marry - the marriage in itself is all the evidence needed and she is free to start using the married name when she wishes to.

OP's timeline show they arrived on K1 visa earlier this year - they have not filed AOS yet. No one was saying it happens automatically. Simply that the certificate is the legal name change document. That means this is what is used to show your new legal name whenever you're getting ID, SSN etc. That is all.
