There's a high volume of cases that come in on a daily basis.  They are stamped on date of arrival so that it doesn't affect your filing date, but it can take a few weeks before someone physically opens it and sends the NOA1 and cashes the check etc.

My understanding is they do an initial review of the package and it's contents and if anything is missing they will send a request for initial evidence (RFIE).  Then it goes in a queue for an officer to process your case.  At that time, they may send a request for additional evidence if required BUT if something was missed initially, they may send an RFIE.

You can file a service request 6 months after the date of your NOA1 if you don't hear anything in that time.

Depending on your category of eligibility, there is the potential for an interview waiver, which may mean it takes a bit longer to process as that is done at the NBC, if you don't qualify or aren't selected for a waiver, it will get sent to your local USCIS field office, which you can track their dates on the processing times page on the USCIS website.
