After NOA2 Questions

Looking forward toward the embassy interview I had a few questions:

1. If my dad is our sponsor and owns his own company how would he get a letter from his employer? 

2. Is it necessary to label pictures the same way they were labeled for the petition (date, location, names of people pictured)? I sent a scrapbook to my fiance that he is planning on taking, but I was told that may not fit through the window at the embassy and to send 4x6 photos as well. 

3. How many messages should I screenshot and send? (1 per month for two years of communication?) or do I only need to send messages from the time we sent our petition to now? Is it even necessary to send messages or an extensive number of messages?  

4. I had been copying and pasting our skype chat log and sent it with our petition, should I send an updated version to the interview? Will they find that believable, the format and amount of chats makes it look impossible for someone to type, but It technically is not a formal chat log from skype just copied and pasted. 

5. When should my fiance begin gathering requested documents as some of them cannot be over a month old at the time of the interview? we don't want to wait and have to push back our interview because of the documents, but we also do not want to get them too early and risk them expiring.
