Are you looking to just have your opinion validated or for all possible solutions? I would personally agree with @David & Zoila; yes, you technically have until June 7th, but I would never consider taking such a chance. The downsides of a surly CBP agent are just far too great in this situation. I would either pre-pone your arrival back into the USA or move heaven and earth to try to go to Chicago and get a stamp.

I wouldnt worry too much I have an old i55i stamp with my extension letter. I recently travelled with the old stamp, it only had a week left on it. I had no problems travelling back from England, no secondary, no nothing.   You are a legal resident in status the worse that can happen is secondary in my opinion, but thats my opinion. I hope you enjoy your time away and try not to stress. You might find this link helpful, apparently there is a possibility once the office is open you can get an emergency walk in if you need to travel.

You are going to be fine.  You may get sent to secondary (my spouse did) so they can check your status online.  But you are legal until June 7th.  (We also had our biometrics appointment letter with us when we traveled.)  We were April 2016 filers, and our ROC took one year.  We still don't have the new green card.  Seems as if it's taking about one month from approval to actually get the green card.  We are traveling on May 30th, so we're cutting it close with getting the new card (we were approved for ROC on April 13th).
