The priority date is the date you filed the initial petition, the date you were officially logged into the system.

For CR-1/IR-1 the date is meaningless because there is no waiting period for a visa to become available. It is used for categories where there are limited numbers and they have to wait for a visa to become available.

Timeline in brief:

Married: September 27, 2014

I-130 filed: February 5, 2016

NOA1: February 8, 2016 Nebraska

NOA2: July 21, 2016

Interview: December 6, 2016 London

POE: December 19, 2016 Las Vegas

N-400 filed: September 30, 2019

Interview: March 22, 2021 Seattle

Oath: March 22, 2021 COVID-style same-day oath

Now a US citizen!

What JFH said.

You will get an interview date as soon as your embassy has availability. They likely have a certain number per month for CR-1/IR-1. They are filled in order of who was completed first. Most embassies (not all) will release availability to NVC at the beginning of the month, for the next month. So it is the middle of April right now so you may need to wait until early May and end up with an interview in June. However Iraq unfortunately may have a longer wait time than that.

When you call you could ask if May dates are already full. A nice person on the phone may answer you. Though sometimes they will say "We can't tell you that" or even claim "We don't have that information" even though others will say they do. Very confusing and inconsistent.
