It's not necessary to send proof of bona fide marriage with the applications, so yes you can open a bank account as soon as you get your EAD.

 

It would be more helpful to visit banks instead of calling, if you can, as it's always better to talk to people in person than on the phone. So maybe go to a Bank of America location and see if you can try to get them to accept your passport, they are the most helpful with people who don't have a fully established status in the US (although they usually do ask for two forms of ID but it won't hurt to try). 

Other than that you can try an online bank or just wait until you get your EAD

We have not sent our package as we thought we needed to have a joint bank account before sending it. It seemed to me like everyone had it for the initial filing.

Yeah don't worry you don't need to send that with your package, so wait for your EAD and then open one, it'll be easier. :)

Joint bank accounts are important, but probably more so for the ROC stage. USCIS knows that you are just starting out together at the AOS stage. Gather all you can for now (consider getting wills and medical power of attorneys as they are great evidence now and for ROC as well as for "life"). Good luck.

What are you AOS-ing from? I did it from a K1 visa and we didn't use any joint account info at all (we didn't have any, at the time). That stuff tends to be more important for ROC, later down the road, but that is coming from a K! experience.
