Hello! I'm Canadian and my fiance and I get married June 10th and will be filing an AOS right after. I am currently on a TN that expires July 1st.

Assuming a miracle doesn't happen, my understanding now is that I cannot work until I physically receive my EAD is that correct? We are getting married for legit reasons(went to college together years ago), and I was under assumption I could still work, otherwise we may have gotten married a little earlier in the year.

Why not do a courthouse marriage now and keep your planned wedding if you're concerned about working?  You shouldn't be long without your EAD in that case

Honestly that's a good option. I think we're both a little traditional in the sense we want "our day to be our one day",, but you are right as in we do have the think of what's worth it..

I get that, believe me I do.  I'm still waiting for my formal wedding too lol.  In immigration times sometimes it needs to happen.
