Hello, I previously worked part-time while going to university last year and recently moved. I am not working right now, however if I did work full time, how long do I need to work to apply for a green card for my husband? He only has his EAD card and he only has about a year left to stay in the U.S. Is it possible for me to work full time for 6 months and get a letter from my employer that I will receive a certain amount of income (that would meet the poverty guidelines on the affidavit form)? Or, do I have to work for a year and then apply for a green card to show proof that I earned the right income? Also, I only have one or two years of tax return paperwork, will those be okay?

Much guidance would be appreciated as I am not sure how to begin...

Yes 6 months of stable work is enough.

But you may not even need that... if your husband works legally in the USA, he can self-sponsor.

When I applied for AOS for my husband, I had recently graduated from college and had a job lined up (along with a starting date), but I had not actually started working yet. I sent a letter from my employer stating what my per hour rate was and that it wasn't a temporary position. I also included a statement from me explaining that I had been in college and that's why my tax returns for the last 3 years didn't show enough income, but that I had a job lined up, etc. We were approved without RFE. Of course, your experience may vary, but it worked for us.

Thank you for your answers everyone! They were very helpful and exactly what I was looking for.

How does the self-sponsor work exactly? Because he's just starting out on his OPT.
