After reading a lot of posts on here, I see that most people submitted pictures with the petition. When I was doing the documents I didn't read anywhere to include pictures, all I included was my flight ticket to Bulgaria and also the stamp in my passport. Would that be enough evidence that I have seen my fiancé in the last two years? From experience, would anyone happen to know if I would possibly get an RFE? It is a little worrisome now that I see a lot of people including pictures.

People who add pictures and other relationship evidence are usually doing so to "front load" their application, meaning, those things are the first thing they want the CO that opens their document to see. Some people also do it so their application "feels" stronger, even though in a lot of cases it's unnecessary. Pictures are considered secondary evidence and do not count as proof of meeting WITHOUT having primary evidence, your flight ticket and passport stamp are primary evidence and are fine enough. You do not need secondary evidence to back up primary evidence.

I didn't provide any pics with our submission, just copies of boarding passes and passport stamps. Didn't get a RFE or have any problems.

Adding pictures to your petition is what is known as "front loading" your application.  Although not a requirement, the people adjudicating your K1 Visa petition are human, and some countries have a higher immigration fraud rate than others.  

Front loading your application with photos can help reinforce your case as a bonafide relationship.
