your app would only pick up cases that are updated on the USCIS website ...

Yes it's interlinked with USCIS system so it's only showing whatever they have updated.

Could be the case Feb approvals has started earlier, but since we dont see the update until we see the mail anyways it still indicate something progress wise.

What was the name on the Marriage certificate?

And you should be fine as long as you filled in the section that allows you to state her previous names.

In the marriage certificate is her single maiden name . 

She just change her last name in her Id and passport.

You should be fine then.
USCIS stage is mostly about checking the petitioners credentials.
Worst comes to worst, youll get a RFE(slight delay).
