I-134 Beneficiary Children & Evidence

I wanted to ask if under the beneficiary's children section, that we ONLY list those children that are coming with him to the USA? He has a child that will be staying with its mother in the UK. 

Also, if I meet the financial requirements through income is it sufficient evidence to provide pay stubs for three months, two years of tax returns, and a letter from my employer?

Yes, only list children coming to the US under your fiance's K1 Visa derivative children's K2 Visa.

From reading many VJ posts about Affidavit of Support during the K1 Visa/Adjustment of Status process, there are generally 2 forms: 

1. I-134 required during the K1 Visa process

2. I-864 required during the adjustment of status

In reading the instructions regarding each form, the instructions regarding evidence and domicile tend to be more stringent in the I-864 than the I-134.  Some VJ members have stated that 3 years tax transcripts are necessary at their K1 Visa interviews, while others refute this and say 3 years tax transcripts are only needed during the Adjustment of Status process.  Also, because some countries are considered higher immigration fraud than others, their COs may be more stringent and request more evidence of support during the K1 Visa interviews. 

The UK seems to be a relatively low immigration fraud country.  Along with the items you mentioned, I'd recommend getting bank statements as stated in the VJ K1 Visa guide: http://www.visajourney.com/content/k1guide
 

I'm a fan of front-loading applications with a balance of good solid evidence, rather than putting in bare minimums and worrying if I provided enough information.
