Yet Another I-131 (Re-entry) Question

Yet another I-131 question. I will spare you the gory details and stick to pertinent facts:

Married couple, wife is an LPR. We came to Ireland in August 2015. Wife stayed for approximately 16 months, flew back for her biometric appointment. Other than minor incident (She had a copy of her I-751 receipt notice / extension rather than the original. They took her into secondary, released her without further questioning after pulling up her information, I assume using her A number), she was let through. Showed up at biometric appointment, similar situation: No problems, except for the copy of the form. LPR approved, GC is dated for Jan 2017. She flew back immediately after biometric, which she discussed with an officer during an interview at ACS.

Also relevant: We weren't exactly diligent about maintaining ties to the States. We both work remotely for American companies as contractors, so we didn't maintain American bank accounts, though the LLC we use for payment does still exist. Her driver's license expired. We've very recently had a baby over here, which also complicates the whole scenario.

We're now trying to get her an I-131, so we're flying back before her six months of absence as an LPR (June 2017). Our plan is to fly in, file the paperwork, hang out for about a week, then come back to Europe. She will then return for her biometric appointment when the notice comes.

Curious about whether or not this is a wise plan or if we should fly back and wait for her bio before leaving. We're flying direct so that if we have any issues we have them before an eight-hour flight, not before. My thinking is, if she didn't get any hassle trying to travel into the States on an expired green card and a dodgy copied form after a 16-month absence, we're unlikely to get much hassle either flying in before six months or when she tries to go back for her biometric appointment, but I'm curious what people here have to say.

I've read the law and the USCIS websites. Interested in people's personal experiences and takes.

Didn't plan to write a novel, but here we are.
