I am trying to get stuff together for my fiance's interview(still don't have the date)

What kind of douments need to be traslated for the K1 visa interview?

Does everything for used for evidence need to be translated?

Who can do the traslation, can I do it or does it need to be officially done and certified?

Also, what kind of stuff is good for evidence, emails, phone cards, plane tickets, ect...?

You don't need to translate anything that is either Spanish or English for the interview. It makes sense - the interview is in the AMERICAN consulate in a SPANISH speaking country.

Any evidence that will be taken and added to your immigration packet and sent back to the USA needs to be translated, that is Birth Certificate, and Police Certificate, Marriage Certificate, Death Certificate, Divorce papers, this is because people at USCIS in the States have to be able to read them and USCIS does not employ multi-lingual people. Evidence like emails, and chats do not need to be translated, they wont be included in the immigration package.

Please submit certified translations for all foreign language documents. The translator must certify that s/he is competent to translate and that the translation is accurate.

The certification format should include the certifier's name, signature, address, and date of certification. A suggested format is:

Certification by Translator

I [typed name], certify that I am fluent (conversant) in the English and ________ languages, and that the above/attached document is an accurate translation of the document attached entitled ______________________________.

Signature_________________________________

Date Typed Name

Address

A friend or family member who is fluent in English and foreign language can do the translation and certify it as per the quote from USCIS.

That information that Dan gave is not correct for all consulates.

In Brazil you are allowed to submit any documents in either Portuguese or English without having to translate them.

My fiance submitted his military service record, both criminal records, BC, etc. - ALL of which are in Portuguese. There are even forms that are submitted to the consulate (such as DS-156) offered in both Portuguese and English.

The interview (his part because I was there) was in Portuguese.

edit: It is possible that Dan was thinking about the proof sent with the I-129F and not for the interview.

The same goes for the Bogota embassy, documents in Spanish or English are fine. The translations were sent in with my I-130 package but for the interview nothing needs to be translated if it is in English or Spanish. Call the embassy and ask or look at the website. It may say there.

For K-1 and K-3 visa holders, you will need your BC and/or marriage/divorce certificates translated when you apply for AOS.
