Question about family sponsored Visas

My US citizen mother-in-law sponsored her 2 sons and their wife+kids. One of the grandkids is now nearing 21 years of age.

What happens if the grandkid passes 21 and their papers process later? Will they be able to come in with the rest of the family?

For a parent to sponsor an adult child there is a multi year wait.  Undoubtedly the nearly 21 grandchild will age out;.  If there is an adult child of LPR class or adult child of USC class remaining at that time their parent could apply and they wait the decade or so more after their parent arrives to get a visa. That means they would be nearly 40 when they arrive.

This will not be over quickly. You will not enjoy this.

She sponsored her sons, wives and children come into account when the visa number is current. CSPA may apply.

When did she sponsor them?
