Studying and licensing while waiting for AOS/EAD

Hello folks! Good afternoon!

So, I'm a K-1, currently waiting for AOS and EAD to be processed. Already did biometrics.

Well, while I cannot work, I'm thinking about qualifying myself. I have a bachelor in law and I found an online school, Penn Foster, that offers a post baccalaureate in paralegal studies, which can be completed in about 2 months. My doubt is: can I enroll? Is it allowed, while I wait for AOS and EAD? And do you guys think it's worth it? I will be applying for law school soon, but I would like to start working with law before and while I go to school here.

Also, I got an invitation to take part in a soccer referee class that will give me a license as a referee and possibly a job offer in the future. Can I take this class? Does it break any immigration law?

You can take classes, but you can't work. :)
