Well it matters to USCIS that you change your address. Otherwise all letters coming from USCIS will be send to your address where you live at now and not to the new one.

So yes, you have to change the address.

Well thats not the problem. I will still be able to get my mail from this address. But does that matter if I don't change it?

USCIS requires people who move within the US to change their address.

Have you checked whether the AOS processing times would be faster at your new location? If you get a waiver from a K1 the location change won't matter but if you would be scheduled for an interview it would matter because the processing time might be different(maybe for the better wohooo). The thing with the interview would be that they would maybe question why your DL, apartment lease, bank account papers etc. are from a different location than the address USCIS has on file.  In the end it's up to you. I don't think it's a big deal if you don't change. It's just that USCIS wants to make sure that you receive the letters and potential RFEs on time...
