I cannot thank you enough for all this helpful info! 

One more question. If my moms income is only a few thousand dollars above the guideline for her family size, is that fine? Or do they tend to want people to be way over it?

If she is over she is over, as long as the evidence also supports this. I'm sorry that your having to do all this extra work! Again, I sincerely wish you all the best of luck with the rfe  and the rest of your process. :)
