Have you thought about doing just body weight training until your stability catches up?  Is it actually your knees that are the issue or weak muscles in the leg? Have you torn your ligaments in your knee? Or is it a different medical issue? Maybe it's a foot or hip issue and not really a knee issue too? You did say you like the hip abductor and adductor machines, which can help with your stability if that's the issue, but I've never used them because I prefer compound exercises. 

 

But I would avoid that back machine... I don't like the crunch machines either.  Do some one arm dumbbell rows, lat pull downs, or cable rows to work your back.  If your gym has a rowing cardio machine, it's really the best full body workout for cardio.  HIIT cardio gets you the best bang for your buck too... 25 mins is all you need.
