You should go with the language that you're most comfortable in, but hopefully you share that language with your fiancé.  Otherwise your relationship might seem suspicious.  For example, my fiancé wanted to use Chinese for his K1 interview, so the interviewer asked him whether I spoke Chinese.  He said, yes, Chinese is the language that we communicate in, and he had brought examples of our emails and texts, which are all in Chinese.  I guess they might be incredulous about how you could conduct a true relationship in a language if you cannot answer simple interview questions in that language.

I believe the general rule for embassies and consulates is that they can communicate in the language of the country they represent (English) and the language where they are located (e.g Spanish in Costa Rica). You can provide information and communicate in whichever of those languages you feel most comfortable.

Our K1 was in English but I wonder if they assumed the chelita didn't speak Spanish; but since we are both bilingual in each other's language it wouldn't have mattered. It's gonna be in whatever language, as has been mentioned, that you are most comfy in
