So I am preparing to make our JA black Christmas cake. I am gonna start soaking the raisins but I don't have any Red Label. What is a good substitute that I could find here locally? Any ideas?

INGREDIENTS

5 lbs mixed dried fruits (raisins,currants, prunes, cherries.

¼lb chopped nuts

½ lb mixed citrus peel

1½ to 2 lbs brown sugar

2 tbsp mixed spice (cinnamon, clove, nutmeg etc)

10 eggs

1 cup rum

12 ozs flour

1 tsp baking powder

1 lb margarine

1 tsp. salt

1 cup port wine

1 tbsp vanilla essence

1 tbsp almond essence

1 cup water

¼ lb pineapple jam

Browning

METHOD

Mince the fruit and soak in 1 cup of rum with spices, essences, nuts, jam and ¼ lb sugar

Mix ingredients well and put in a jar, cover and allow mixture to steep for 3 weeks or more.

When ready to bake, cook fruit over a low heat with 1 cup of water for 15 minutes.(This preliminary cooking of the fruit shortens baking time of cake and reduces the possibility of the cake burning.)

Cream the butter/margarine and remaining sugar well and add eggs beating in one at a time.Then add this to the fruit mixture.

Stir in enough browning to make the mixture dark brown in color. Add the flour and baking powder last.

Place mixture into baking pans -greased and lined with 2 sheets of waxed paper. Fill the pans ¾ full.

Bake in a 300 degree gas mark 2 oven for 2½ to 3 hours. Test with skewer before removing from oven.

As soon as cakes are removed from oven, ####### all over with skewer and pour slowly over them a mixture of rum and wine which the cakes will absorb.

Allow to remain in baking pans for 2 to 3 days to fully absorb liquor before serving.

Girl, they keep mixing me up at work I've been on 2nd shift for two weeks now and then on Monday, they're moving me to 1st shift! That will be 3 different shifts in 3 weeks My poor body doesn't know when it's supposed to sleep or when it's supposed to wake up!

Kevin has to get it from the JP or deh same place him get his birth certificate from in his area...it states that he has never been married before and if he was married before he is now free to marry. It cost b/t $90-200 U.S. from what I have been told!

I just wanted to add (but I am thinking most of you probably already know this) for those of you doing the K-3 or CR-1 that you can get your husband added to your car insurance as a non-driver for more documentation and the rate shouldnt go up (if anything go down b/c now you are married!).

I also have a question. How are you going to file your taxes at the end of this year as far as filing status. I would think married filing separately but like the additional income would be zero..right?

You can ask Melwin (Jax) this info although he just got here this summer? I don't think any of CR1's or K3 men have been here long enough to know much about the tax info. If you do it through a K3 or CR1 there are more steps to follow. I also think that nyseness (Anna) knows this info too. You can try PMing one of them.

If it's a k1, we filed jointly....because he was here last year. We'll be obviously doing the same thing next year.

If he is not here yet you need to fill out the ITTIN form. You will need his passport up here with you. You will need to make a copy of it and get it notarized and send it in. If you know a notary in your state then all you need is a copy of the passport. I knew a notary so all I made is a copy. Or if he is coming up here sometime next year you can also file an extension on your taxes and wait until he gets here. I had to file an extension cause I found out about getting my ITTIN to late. But it is well worth the extra cash.

Jax, I know you're hubby is in school, so I am not sure what the threshhold is, if there is a minimum tuition that needs to be met, but you can file the Hope Credit for even more. I have filed for the Hope Credit for the past 2 years with school and I will be filing it for my 2007 tax returns.

you should try to get on that ASAP!!!! i know some people haven't been asked for it and have gotten approved but it is awlays better to be over prepared just incase...
