You can OCR a pdf to avoid retyping it - just saying, if you do that often and want to save yourself the trouble.

OCR means? 

 

I feel like I'm usually still able to highlight on a PDF and copy something out but I wasn't 'able to this time. I'm on a Mac and usually I work on a PC so maybe this mac doesn't have something my PC has.

It is the optical recognition of characters (better description here: https://en.wikipedia.org/wiki/Optical_character_recognition) - you could scan a printed copy of a document and generate a soft copy where the text is searchable - edit ready.  Not sure what is installed on your Mac; different software are available.

Seems complicated...took me about 45 seconds to type out that paragraph (usually quicker but my fingers are cold right now because I'm cheap and don't run the heat in my house)
