does anyone know if its ok to travel to the US while the I-130 is processing?

I haven't traveled yet to US during the process but i think it should be okay as long as you have a valid tourist visa and you can show that you will leave US before visa expires or something.

I'll be travelling under the VWP so thats fine. Apart from a return flight, I don't know how else to show them I'll be leaving. Just don't want to jeopardise the whole process

If you have a job, you can ask for letter from your company stating that you will be on leave and that you will report back on certain day. If you have properties in your home country, that counts too. Proof of funds.

Hang in there.  We are all in the same situation as you.   I find it is helpful to read the posts, and the case completes to try to figure out approximately when my case will be completed.    For me, she lives 8000 miles away and I cannot even plan a visit or book a plane ticket until I have an interview date.  Good luck.
