We are filling out my fiancee's K1 Fiancee Visa paperwork.  She worked in the US as an Au Pair for 2 years and received a US Social Security Number so she could pay taxes.  That was 5 years ago and now she can't find the card and doesn't know her social security number.  If we fill out the paperwork without that, will they figure it out and reject it?  She currently lives in Costa Rica, so going to the Social Security office in the US is not an option.  We've tried calling her old bank and school where the took classes, but they don't have her on file anymore.

You could add a page to the application like with any question you have additional information for where you explain if you feel worried about it.

"i-129f addendum, Part 1, question 10" like many do with the q34 on how they met... then you could find out when she is in the country and can go in person.
