I am at the very beginning stages and just about to send out the K1 visa packet to Texas next week.

I have met his parents but he has yet to meet mine. However, he is planning to visit me in a month or two, to meet my parents. This piece of evidence will not be included in the initial K1 visa file because we want to file it ASAP so we can get the process started and moving. Is it a good idea - and will we have any chances down the line to show that he has finally met my parents?

Also, has not meeting a set of parents (either the petitioner/beneficiary's) effected anyone's process negatively?

Agreed with above. Also depending on what country the beneficiary is from, this might not even matter... If the country of the beneficiary has a strong culture where family approval is needed, definately meeting of parents is huge; but for a lot of countries this is not even an issue. My partner and I never met either one's parents.

02/03/2017 - Married 

02/24/2017 - AOS packet sent

06/01/2017 - EAD/AP Combo Card Received in mail

12/06/2017 - I-485 Approved

12/14/2017 - Green Card Received in mail - No Interview

He met his family (all 6 siblings, his mother, and a few aunts/uncles, nieces, and nephews) but he wasn't able to come here to meet my family. Getting a tourist visa from India is more complicated than some other countries, so we decided that I will go there again instead. It simply wasn't working for him to come here on a tourist visa. Nothing in the forms states that meeting the family is REQUIRED. However, it certainly helps as proof of a bona fide relationship. In my packet, I included pictures of us with his family in addition to just the two of us. There just won't be any pictures of him with my family :)
