My fiancee has a child who is not coming to the US now on a K-2 visa, does she still have to fill out a DS-160 now for her child or can it be filled out at a later date. We decided it would be best for her to remain with her father for a year or two before migrating to the US, she currently lives with him.

 

Also, my fiancee mailed and emailed a copy of DS-160 for herself and applicant statement to the embassy, three days later the embassy in Georgetown, Guyana responded by email and said she needs to register at this website https://ais.usvisa-info.com/en-gy/iv , after registering she needs to pay a $265 processing fee to Bank of Baroda and then schedule her interview at the website. We thought an appointment letter would be sent in the mail to her for her interview. Can K-1 beneficiaries schedule their own interviews now for the embassy in Georgetown, Guyana or does she have to wait for an appointment letter in the mail.

Only children entering US need the DS-160. Since she will remain in Guyana there is no need to fill out the DS-160 or pay her fee at this time.

You have 1 year from the date of K-1 issuance to later bring over the child on a k-2 otherwise she will need to be petitioned on I-130 - petition for alien relative.

 

As for the interview schedule each country can be different. If they told her to register at that website then do it and pay the fee.

I previously brought my ex-fiancee over with 1 of her 2 kids.
