I believe she will just need to take with her the packet that she will receive along with her passport. The envelope that says do not open.

I am also taken my paperwork in my hand luggage that we have used through the process to be on the safe side but I don't think she needs it for POE but someone else may have to confirm this.

It will be wise to save as much as possible, since she will be going through aos and following stages... I often find that even if I don't need the specific paper, I sometimes need to remember something, and then it's good to have. I'm saving everything and have most of it electronically. 

Original documents ofc keep, since you can be asked for them at a later stage...

As Zoe said though, it's not required for POE :)
