What to do after getting married on K1 visa?

Once we apply for AOS is she safe to stay until the process of AOS is finished? she is safe to stay during that time and doesn't have to leave or anything else that I may not be aware of.

She is safe to stay and she should NOT leave the U.S. until she gets her green card or the I-131 (Travel Authorization) is received.

If she leaves he US before one of them is received, she will not be let back into the US and you will have to start the whole process over from scratch but with a spousal visa since you are now married.

If she wants to be able to work soon and or possibly needs to travel internationally, it would be a good idea to file for both the I-765 (EAD) and the I-131 (AP) in conjunction with the I-485 (AOS). Also, if you file them all together in the same packet, there is no additional cost for the I-765 & I-131, you only pay the cost for the I-485. If you file them separately, then you have to pay for them each individually. We filed all 3 in conjunction with one another just in case we needed it and since there was no additional cost to do so.

The fees for the I-765 and I-131 are waived when filed with a pending I-485. They can be filed at the same time as the I-485, or after the I-485 has been filed and there will be no fees for those 2 forms.

The fees for the I-765(EAD-work authorization) and I-131(AP-advance parole for travel) are waived when filed with a pending I-485, so include both of those too. It takes about 60-90 days to receive the EAD/AP combo card, which will allow you to work(along with an SSN) and re-enter the US when traveling abroad while waiting for the green card approval.

You need all the supporting documents for each form as well, so read the instructions for each one. You can also search here on VJ for what to include with each form if you get stumped. There are also example forms here on VJ you can look at when filling out the forms. They can be helpful.
