Im the US citizen, my wife is the green card holder (2yr) I lost my job on Monday. I qualify for food stamps till I get another job. We have ourselves and 3 small children in the home. I filled out the paperwork and had a phone interview, but got paranoid that it could effect our greencard/immigration process. So I withdrew the application. Does anyone know if its ok to get the foodstamps and it wont effect her status as Im the one filing not her. Thanks for your help.

You and the kids, assuming they are US citizen, can definitely get food stamps and other assistance. With her, it could affect the I-864, but it depends on if the assistance is means tested; there may be other help available.

Looks like SNAP in Oregon is a federally funded food stamp program which is a mean tested benefits. Your wife does not qualify for food stamp due to the I-864, but if she works her income gets counted toward the family household income when calculating the SNAP benefit. I'll assume your children are US citizen, so they are entitled to SNAP as well if that is the case. Beyond getting SNAP, I recommend going to your local food bank.

Some states have different policies, like she isn't counted as in the total number of household members even if her income is counted.

Other policies might be that adults (so at least one of you) who are not caring for very small children must be working or in job training or the like. Best to consult with your local social services, but make sure they are well aware that she is a LPR and does not qualify for benefits so you can't be accused of any sort of fraud later on.

Also look into WIC for the kids.
