First of, thank you to everyone here who patiently answered my questions :D you were all right and I was worrying too much XD I still have questions though, would it be wise to book a flight now? It's just that plane ticket price is going up now considering its Christmas soon, and I really, really want to spend Christmas together with my fiance :D we're looking at Nov. 30 since that would give us enough time to wait for my passport to get here and it's 8 days after my CFO appointment (Nov. 22)

It's been repeated many times here. Do not purchase airline tickets until you have your passport with visa in your hand! Exception is if you are paying for a fully refundable airline ticket which costs much more. There are many stories here of people having purchased airline tickets prior to visa in hand and end up paying twice.

Don't do it...don't book that ticket until you have your visa in your hands. This is ONE CHRISTMAS in a long (hopefully) series of Christmases to come.

Make plans to celebrate Christmas when you know for sure.

Embassy states to not book your flight or quit your employment UNTIL your visa has been issued and delivered. You status is ISSUED, within 5-7 days after that you should have your visa in hand.. you then check it over for mistakes - name spelled correctly and so forth.

"Do not finalize arrangements for travel to the United States, dispose of property, or resign from your job until a visa has been issued and delivered to you. Generally, a single-entry fiancé(e) (K1) nonimmigrant visa is valid for six months from the date of issuance, unless its validity is limited by medical or other restrictions"

CFO can be a cake walk, if you are prepared. But if they sense any weakness (shy, meek, no self-confidence) they will start circling, demanding more documents, etc. Here is CFO info: http://visaconnection-philippines.com/index.php/2-visa-process/5-cfo-gcp-seminar

With that said, if you want to gamble, then roll the dice.. no one here can makes that decision
