Getting a job AFTER filing I-130?

If the beneficiary gets a job (not listed in the I130 petition) after filing the I130, do they need to somehow contact the USCIS or NVC that they got a temporary job (for untill their visa is approved) or will getting the job somehow affect the visa application process?

You don't fill out the I-864 until the NVC stage, so that is when having a job becomes important. If you find a job after sending in that form )or a better job, or loose your job...), you simply send in a new I-864 next time you send in documents, or bring it to the interview.

Are you referring to question 15 of part C on the I-130 that asks about the beneficiary's current employer? I would think there is no need to inform them of this change since any job the beneficiary has is likely to be given up soon anyway. I will be leaving my employment before I immigrate. I imagine that's the same for almost everyone. Rare exception is where the company is able to offer a transfer to an office of theirs in the USA. So they will be expecting him/her to leave that job soon anyway.

No, you do not need to update USCIS with any new information. As long as everything was accurate when you filed the I-130, you should be okay. When you finally get to the NVC, you will fill out a form called DS-261, here you will be asked to fill out the Beneficiary's employment history, you can add details about his/her new job at that point.
