Can k-1 interview be postponed if traveling?

Timeline

My boyfriend and I are starting to plan for the future and I’m trying to figure out how to get the bulk of the waiting for the k-1 visa done before he goes on a 2 week trip to Peru with his mom in October 2017.

He’s Australian and would need to be in Aus for the medical exam and the interview. I’ve read that the embassy in Aus just gives you a date and we don’t have a say? I’m worried his trip to Peru, even though it’s just 2 weeks, could fall during the interview appointment, if this happens, could the interview be postponed?

I guess I’m also wondering what the safest option would be, should we try to apply and launch the I-129 package a few months before his Oct 2017 trip so that the interview is likely after the trip? Or should we apply much earlier in February 2017 and try to get the interview and fiance visa before his Peru trip? I read if you get the k-1 visa, you can wait up to 6 months before you go to the US to get married, but if it all goes through super early that could also be a problem...

Any advice or suggestions?
