The entry stamps that they are asking for a copy of, is it every entry stamp that I have including from my expried passport. Or is it just the entry stamp for my last recent entry?

I would just put the ones from your current valid passport, as you are not obligated to keep old passports, most countries don't even return old passports when it is renewed, unless there are visas that are still valid.
