We still don't have the 1040 and W2, and my interview is on Oct. 20. Is there any other easier alternative we can present to the US embassy as evidence of support? Or Should I just reschedule the interview until we get them?

Get a tax transcript from the irs. You can get them faxed. This is better than a 1040 see IRS web site for info.

How long will that take?

I went to the IRS site and requested my 2015 transcript, and it arrived in the mail in 4 days. I sent the transcript, I-134 and some other papers by DHL on a Friday, and it arrived at her house in Leyte on the following Tuesday.

Naturalization Timeline

01/05/2020.......Filed N-400 online.

01/07/2020.......I-751 transferred from Texas Service Center to Lee's Summit.

01/31/2020.......Biometrics Appointment.

03/06/2020.......Interview Scheduled 04/16/2020.

06/16/2020.......Interview Rescheduled 07/08/2020

07/08/2020.......Approved

08/20/2020.......Oath Ceremony

He didn't keep a copy for his records or hasn't filed (applied for an extension) ? Like others said, he can get a tax transcript easy enough.

Visa chase and citizenship.. DONE!
