So we are going to fly back from our country Vietnam to the USA. Korean Airline has changed its schedule and as a result we will have to stay at ICN for over 24 hours. Korean Airline is providing hotels outside of the airport.

My research indicates that we would have no problem getting out of ICN immigration and get back later because we have an onward flight to the USA and with a valid Advanced Parole.

Anyone with recent personal experience?

I did a little research on the need for a transit visa for Korea but didn't have much luck. You might try calling the airline to make sure what is needed. The AP is only for re-entering the US, so I don't think it helps relative to Korea but I could be wrong.

Good Luck!
