I haven't heard a definitive "you are allowed to continue your studies while your AOS is pending,"

There are several people you gave you that in the above thread. If you need further convincing, talk to your school.

so my concern is that USCIS would reject my application for permanent residence if they found out that I was illegally continuing my studies while the AOS was pending.

They won't and can't deny your AOS for "illegally continuing your studies"! Its not illegal to study in the USA, and even if it were somehow defined as "employment" by USCIS, they cannot legally deny your AOS for that if you are married to a US Citizen.

You're in the clear.
