I-1864 and expected birth

We are expecting birth of our first child end of September. In the I-1864 we have put down household size 2. By the time I get to the actual interview we will be 3. Should I mention something on the I-864 or the NVC cover letter? Will this be an issue in any way?

Also, my spouse lives and works outside of USA for some time now (maintained domicile). The tax returns for the filled years have income from her job outside USA and income from investments in USA. We are not sure if we should use the income (over the minimum poverty limit) for proof of support or assets.
