"None" and "N/A" are not interchangeable. Many questions are applicable, with NONE being the correct answer. $0 is only a correct answer when there zero income. If not required to file a tax return, you do not put $0 as the answer in the tax return question, because if there was no tax return, the nonexistent tax return does not have a zero on it.

Interpret questions literally, and answer accordingly. The affidavit of support does NOT ask what the persons income was. It asks what was shown on a tax return as their total income. (In the case of the 1040EZ, it's the adjusted gross income.)

If the sponsor was not required to file a tax return because their income was below the filing threshold, they can simply hand write in the available space, "Not required to file. Income below threshold." (Works every time it's tried.)
