Here goes all i know.

Girl came on j1 visa. Met lpr guy. Fell in love. Girl extended visa got approved. Tried the second time got denied. Overstayed visa more than 1 year.

Lpr guy and girl got pregnant and immediately married. Lpr guy cant naturalize until next year.

What's the best way to get the girl her gc?

Is it to file 130 asap or wait until lpr guy gets naturalized to do anything?

If he waits for naturalization, what does he put in his wife's status at the n400 form?

So confused..

He can file an I-130 under the F2A family preference, but that won't help her any in the short term. Since she's overstayed then she can only adjust through being an immediate relative of a US citizen, so she will need to wait for him to naturalise before she can file an I-485 based on the pending (or approved - by then) I-130.

He will need to write his wife's status as a J-1 overstay on his N-400.

She would also need to not be subject to the two year J-1 home residency requirement to be eligible to file for AoS.

"I-130 pending" isn't a status though.

I doubt her status will even come up.

Usually the J-1 visa itself has it printed on it whether the bearer is or is not subject to the Home Residency Requirement.

If he files 130, is it better to write 130 pending instead of j1 overstay? No, the wife had J1 status which has now changed into an overstay. The I-130 is just a form and not an actual status.

Won't the CO question why she overstayed or fault him for harboring a non resident alien? This is just a risk they will have to take. Overstays are forgiven for immediate relatives of US citizens who are AOSing, not LPRs. Even if he were a USC, the I-130 on its own would not allow her to overstay. The decision to "wait it out" is illegal. She should return to her country.

How will they know if she's not subjected to the 2 year home residency? They should check the visa. It should say either "TWO YEAR RULE DOES APPLY" or "TWO YEAR RULE DOES NOT APPLY". If it does apply, she must return and wait the 2 years even if he naturalizes.

For a valid J1 visa, yes. But from my understanding she has no visa and no such privilege is extended to her. She is here illegally and I can only advise that she leave and do things the legal way.

That'e one option. Another is to AoS through the US citizen husband once he naturalises next year. She could theoretically seek a no-objection letter or other applicable waiver for the HRR if she is subject to it.

That's the same option. AOS-ing through the husband is not an issue, nor is a possible waiver . The issue is that she is planning to continue overstaying to wait things out. That is illegal. She has a legal path to residency yet is planning to (continue to) be illegal. We cannot advise her to wait in the US for her husband's citizenship.

OP, she needs to return home (HRR or not, waiver or not) and apply for an IR1 visa. They also have to be honest about her status on the I-130. I know it's not what they would want to hear which is why you asked if they can omit the info on her status but those are the legal steps. Advice to stay in the US and wait for his citizenship with an expired visa would be against the TOS of VJ. Good luck! :)
