Using retirement accounts for affadavit of support

Timeline

We are working on the visa process for my husband, who is British. We currently live in Honduras, where we are self employed, but we have not had any income on paper for a couple years here, which is going to be a problem for my affadavit of support. This means I'll need to show sufficient assets. Most of my financial assets are in my 401K and my IRA. My question is, has anyone had success using retirement accounts as your assets in this situation? I can't find a clear answer as to whether they count or not.

To be counted as assets, they need to be reaidly convertible to cash within a year. A 401k or IRA, if they meet that requirement at all, would sustain a significant financial loss, so likely would not be considered acceptable (unless you are ner retirement age, which I am assuming you are not).
