I used Greenbaum's site to walk through scheduling the interview. It is extremely accurate, so I recommend it. Remember to pay you Visa Fee at BPI, you cannot schedule until you have done that, his site covers all of the requirements. I also have sent an e-mail to asknvc@state.gov for a status of my application so that I have an official response from them for my fiancee to bring along with the screenshot of the status as ready now that it shows as ready.

BTW we scheduled while it was at NVC, nothing will prevent you from scheduling prior to the status changing to Ready.

As far as the SLEC medical exam, my fiance just completed her exam a few days ago Monday, we printed a screenshot from the CEAC NVC website case READY status and it was accepted without question.

I think this is a new thing NVC not sending the letter or at least an email confirmation, because other petitioners whom received their NVC case number up till a couple days before ours (July 20) had received either the NVC letter or email between 3-8 days after they received their NVC case number. However, recently this week several people are reporting that when they call NVC, including myself when I called, the NVC rep told us they do not mail or email any letter?

Now the issue were having is she worked in Hong Kong 4 years, and we cannot get a Hong Kong police clearance certificate because they require that specific letter from NVC with the the case number, beneficiary name, and embassy address. And per the requirement for the embassy interview it states they require a police clearance from any country residing 6 months or longer, yet how can we get the police clearance from Hong Kong if NVC no longer sends the letter? So I can assume since due to this situation being impossible and beyond our control to get the police clearance letter from Hong Kong, the requirement will be waived?

Can someone confirm this?

Since HK will issue a PC you will need to make an effort to get the PC. HK is one of the most difficult in getting a PC, but they recently started taking payments online for your PC. HC requirements for a PC is a photocopy of a letter from the relevant Consulate / Immigration Authority / Government Authority, which contains his or her name and clearly indicates that the production of the Certificate is required. Contact USEM in person and they will provide you with a letter.

My fiance got the NVC Letter today.

02-26-2016 : Visited my aunt in Corpus Christi
02-27-2016 : Meet Ryan and he asked me out 
03-30-2016 : He proposed before I left U.S.
04-01-2016 : I left U.S. I wish I had enough days to marry him.
But, I have a very important business meeting to physically attend in Cebu on 04/04. I also have a business trip due in Japan for May 2016. 
Circumstances lead me to K-1.
