Form I-134 Do I need wet signature employment letter?

Hi,

I am preparing the I-134 for my fiance and there is only me and my fiance accounted for under household size, so I should be over $20,025 to satisfy the income need.

Right now my pay is about $2,300-$2,600 a month. I have paystub (and W2) to show my income. This should put me at about $27,000+ a year. Problem is that my 2015 W2 and tax return only shows me as being at $17,292 because I was off work for awhile due to travel and personal reasons. Earlier this year (2016), because I had to refinance a mortgage (already completed) I needed to make my pay stable so I returned back to full time at my employment place. I have a stable record for Jan - July of 2016 which shows I make $2,300-$2,600 a month on my paystubs.

I wanted to find out if I supplied my last 3 years of tax transcripts:

2015 $17,292

2014 $26,045

2013 $22,487

along with this 7 months' paystubs showing my current pays, will that be enough supporting evidence of my income to write $27,000 as annual income?

The Instructions for the I-134 said that evidence is a statement from employer. My employer is currently out of the country so I can not get a wet signature copy of an employment letter. So I wanted to see if I can send a faxed/scanned copy of his signed letter that is emailed back to me with the above mentioned paystubs and tax returns would that work?

To not complicate things, I do not want to list real estate value for my I-134 because I share the asset with my sibling and we still have 1/3 mortgage left. I'm not sure how to divide before filling in how much real estate I have.
