AOS I-864 Joint sponsor self employed

Hello, I am in the process of the spousal CR-1 visa. I am currently in the I-130 stage and trying to think ahead to get prepared for the NVC stage. Since I am currently living abroad with my wife (less than a year) I have been out of work so I will be using my father as a joint sponsor on the I-864 forms. My biggest question is what documents does he need to have being self employed? He also works for another company as well. I have read that we can get tax transcripts and they will include what we need for his proof of income. I cannot find a solid list of what exactly a person needs being self employed.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.
