Italy (Naples) problem with moving assets for K1

I thought I'd ask more specifically regarding Naples. Long story short is that my fiancee (US Citizen/sponsor) does not meet the income requirement and doesn't have enough assets for our K1/I-134.
I (the intended immigrant) have money I would like to use for this, but it's on my PayPal, which isn't recognized as a "real" bank account.

My options are to transfer it from paypal to my Italian bank account (maybe hoping I can provide bank statements and it would count)

OR

transfer it to my fiancee's US bank account so that it would qualify as her assets. The problem with this option is that I've seen how it can raise a red flag, about me paying her for my visa, or it being a temporary loan, etc. The website we've been using to organize our K1 application even states that generally only assets in her possession for at least 12 months will be considered. I guess it makes sense because they ask for bank statements for the last 12 months.

Our problem is time, I think. I've been delaying the interview already because we only have 5-6 months to move about ~$40000 she's missing in assets. Has anyone had a similar experience with the Naples consulate? Because ultimately it depends on them. Thank you for your time.
